1 bag small potatoes (any color)
Salt & black pepper
1 tbsp. thyme
2 tbsp. lemon juice
2 tbsp. olive oil
Zest of 1 lemon
2 tbsp. rosemary/parsley/cilantro/mint/thyme (or any other fresh herb you have at home!)
- Boil potatoes in large pot for 10 minutes
- Preheat oven to 350℉
- Remove potatoes from boiling water and prepare baking tray. Mash each potato using a spatula or your hand, and place on baking tray.
- Season potatoes with oil, salt, pepper, and herb sauce.
- Place potatoes in oven for about 30 minutes, or until crispy.
