Smashed Potatoes


Roasted Potatoes

1 bag small potatoes (any color)

Olive oil

Salt & black pepper

1 tbsp. thyme

Herb Sauce

2 tbsp. lemon juice

2 tbsp. olive oil

Zest of 1 lemon

2 tbsp. rosemary/parsley/cilantro/mint/thyme (or any other fresh herb you have at home!)


  1. Boil potatoes in large pot for 10 minutes
  2. Preheat oven to 350℉
  3. Remove potatoes from boiling water and prepare baking tray. Mash each potato using a spatula or your hand, and place on baking tray.
  4. Season potatoes with oil, salt, pepper, and herb sauce.
  5. Place potatoes in oven for about 30 minutes, or until crispy.
