Crispy Smashed Potatoes with Fresh Herb & Lemon Sauce

Crispy on the outside, tender on the inside, and finished with fresh herbs and lemon.

These Crispy Smashed Potatoes are boiled until tender, gently smashed, and roasted until golden and crisp. A bright lemon and fresh herb sauce adds plenty of flavor, making them an easy side dish for weeknight dinners, weekend gatherings, or holiday meals.

Ingredients

For the Smashed Potatoes

  • 1 bag small potatoes, any variety.
  • Olive oil, as needed.
  • Salt, to taste.
  • Freshly ground black pepper, to taste.
  • 1 tablespoon fresh or dried thyme.

For the Fresh Herb & Lemon Sauce

  • 2 tablespoons fresh lemon juice.
  • 2 tablespoons olive oil.
  • Zest of 1 lemon.
  • 2 tablespoons chopped fresh herbs, such as rosemary, parsley, cilantro, mint, thyme, or a combination.

Directions

1. Boil the Potatoes

Place the potatoes in a large pot and cover with water.

Bring to a boil and cook for approximately 10 minutes, or until the potatoes are tender enough to pierce with a fork but still hold their shape.

Drain well.

2. Preheat the Oven

Preheat the oven to 350°F.

Lightly coat a baking sheet with olive oil or line it with parchment paper.

3. Smash the Potatoes

Arrange the boiled potatoes on the prepared baking sheet, leaving a little space between each one.

Using the bottom of a spatula, glass, or another flat utensil, gently press each potato until it flattens while remaining mostly intact.

4. Make the Herb & Lemon Sauce

In a small bowl, combine the lemon juice, olive oil, lemon zest, and chopped fresh herbs.

Stir until well combined.

5. Season the Potatoes

Drizzle the smashed potatoes with olive oil and season with salt, black pepper, and thyme.

Spoon or brush some of the herb and lemon mixture over the potatoes.

6. Roast Until Crispy

Transfer the baking sheet to the oven and roast for approximately 30 minutes, or until the potatoes are golden and crisp around the edges.

7. Finish & Serve

Remove the potatoes from the oven and finish with the remaining fresh herb and lemon sauce.

Add a little extra lemon zest, fresh herbs, salt, or black pepper before serving, if desired.

Serve warm and enjoy.

Tips for Crispy Smashed Potatoes

For the best texture, choose small potatoes that are relatively similar in size so they cook evenly. After boiling, drain them thoroughly before smashing. Removing excess moisture helps the potatoes crisp as they roast.

When smashing, press firmly enough to flatten the potatoes and expose some of their interior, but not so hard that they completely fall apart. Those uneven edges are what become especially crispy in the oven.
