Blueberry Pancakes

Ingredients

  • 1 cup of oats
  • 1 banana
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp ground cinnamon
  • 1/2 cup plant milk
  • 1 tbsp ground flax
  • 1 tsp apple cider vinegar
  • dash of vanilla extract
  • blueberries

Directions

  1. create flax egg by mixing 1 tbsp of ground flax with 3 tbsp of water. Set aside to thicken
  2. blend oats into flour
  3. mix together dry ingredients in a medium bowl
  4. mash the banana and add all of the wet ingredients to the dry and mix until well combined
  5. add in the flax egg and blueberries and mix until batter forms
  6. heat nonstick pan on medium heat
  7. spoon batter onto thespian and wait for bubbles to form. Once the bubbles appear, flip the cake and cook for roughly 2 mins on each side
  8. enjoy!
