Ingredients

For the Potato Bites

  • 1 1/2 pounds baby potatoes.
  • 2 tablespoons olive oil.
  • 3 cloves garlic, minced.
  • 1/2 cup freshly grated Parmesan cheese.
  • 1 teaspoon Italian seasoning.
  • 1/2 teaspoon garlic powder.
  • 1/2 teaspoon paprika.
  • 1/2 teaspoon salt.
  • 1/4 teaspoon black pepper.
  • 1 tablespoon melted butter.
  • 2 tablespoons fresh parsley, chopped.
  • Extra Parmesan, for serving.

For the Garlic Parmesan Dip

  • 1/2 cup sour cream.
  • 2 tablespoons mayonnaise.
  • 2 tablespoons freshly grated Parmesan cheese.
  • 1 small garlic clove, finely minced.
  • 1 teaspoon lemon juice.
  • Salt and black pepper, to taste.

Directions

1. Prep the potatoes.
Wash and thoroughly dry the baby potatoes. Cut them into bite-size pieces, keeping the pieces as evenly sized as possible so they cook at the same rate.

2. Season everything.
Add the potatoes to a large mixing bowl. Toss with olive oil, minced garlic, Parmesan, Italian seasoning, garlic powder, paprika, salt, and black pepper until evenly coated.

3. Prep the air fryer.
Preheat the air fryer to 400°F. Place an air fryer liner in the basket according to its directions, then arrange the potatoes in an even layer. Avoid overcrowding so the hot air can circulate around the potatoes.

4. Air fry until crispy.
Cook for 18 to 22 minutes, tossing the potatoes halfway through, until they're deeply golden and crispy on the outside and fork-tender in the center.

5. Make the dip.
While the potatoes cook, stir together the sour cream, mayonnaise, Parmesan, garlic, lemon juice, salt, and black pepper. Refrigerate until ready to serve.

6. Finish the potatoes.
Transfer the hot potatoes to a bowl and toss with the melted butter and fresh parsley. Finish with another generous sprinkle of Parmesan.

7. Serve.
Serve immediately while they're hot and crispy with the garlic Parmesan dip on the side.

Tips

Drying the potatoes well is one of the easiest ways to get a crispier exterior. Any excess moisture can cause them to steam instead of crisp.

Don't pack the air fryer basket too tightly. If you're working with a smaller air fryer, cook the potatoes in two batches for better browning.

For extra crispy potatoes, add another 2 to 3 minutes of air frying at the end. Keep an eye on the Parmesan since it can brown quickly.

Want a little heat? Add a pinch of crushed red pepper flakes or cayenne to the seasoning mixture.

Phantom Tip: Use Phantom Chef Air Fryer Liners to help catch melted Parmesan, garlic, and seasoning while the potatoes cook, making cleanup easier without sacrificing all that crispy, golden goodness.
