PEANUT BUTTER TAHINI STIR FRY :

 

INGREDIENTS:

COCONUT OIL SPRAY ( OR YOUR FAVORITE)

2 EGGS

ONE CAN OF PALMINI RICE

1/2 CUP OF EACH ( CHOPPED ):  MUSHROOMS , GREEN BEANS, PARSLEY, CILANTRO, SCALLIONS

 

SAUCE :

3-5 TBS TAHINI PEANUT BUTTER TAHINI

2-3 TBS LIQUID AMINOS

1/2 LEMON JUICE

3TBS WATER

INSTRUCTIONS:

  • ON MEDIUM HEAT START INFUSING YOUR OLIVE OIL ON THE SKILLET, ADD GINGER, LEMON ZEST, PAPRIKA AND SALT

  • ADD CHOPPED VEGGIES AND SAUTÉ THEM FOR 3-5 MINUTES

  • ADD PALMINI RICE AND MIX IT ALL WELL, COVER AND LOW HEAT FOR 15-20 MINUTES

  • YOU CAN PREP YOUR SCRAMBLED EGGS SEPARATELY AND ADD THEM OR CREATE CIRCLE IN THE MIDDLE OF THE SKILLET AND CRACK YOUR EGGS INTO IT, SCRAMBLE THEM AND MIX WITH VEGGIES UNTIL FULLY COOKED & WELL COMBINED

  • IN A SMALL MIXING BOWL: COMBINE TAHINI , LIQUID AMINOS & LEMON JUICE , MIX WELL AND TRY IT , YOU CAN ADD WATER / LEMON OR TAHINI IF NEEDED TO GET CREAMY TEXTURE

  • POUR DRESSING ON TOP AND SERVE

  • IF YOU ARE A SPICY LOVE I RECOMMEND ADDING SPICY TAHINI DRIZZLE ON TOP
